This is an easy-to-make casserole that can be dressed up or down depending on how you serve it. I love this dish for pot lucks or if I am having a dinner party for a group of six or eight. It is similar in taste to chicken spinach enchiladas (only better) and much easier and quicker to make than enchiladas. Serve it with guacamole, chips and a side of barracho or black beans for a complete meal.
