Salted Caramel Coconut Cookies

Now that Spring has sprung it always seems like it’s this time of year when I want to start baking and trying out new recipes. These cookies are essentially a short bread cookie rolled in coconut topped with a little caramel and pinch of coarse sea salt.

I thought, that with Easter just around the corner, that these salted caramel coconut cookies would make the perfect addition to the Easter dinner table, and it doesn’t hurt that they remind me of a little Easter basket.  They really are as delicious as they look! This one batch makes about 50 cookies so there is more than enough to go around, if you are willing to share!

I promise these cookies are worth the work and it’s even easier if you have a couple of extra hands in the kitchen, which is the perfect excuse to spend time with family! Give this recipe a try, and let me know what you think!
