One Pan Pasta with Sausage

Those of you who have followed our blog for any length of time know that I am a huge fan of one pot meals. After all, who wants to spend the whole night washing pans in the kitchen? Certainly not me.

This one is also a great way for me to get my son to eat collard greens. I have to sneak vegetables in with him any way I can. I am convinced that one day he will magically love eating vegetables, but until that actually happens I will just keep living in fantasy land. Maybe after he takes nutrition at school this next semester he will get more on board with eating veggies. He actually asked me to freeze some the other day for him so that he can make a quick after school snack, and I nearly fell over and fainted right there on the spot. When it comes to getting our kids to eat their veggies, my motto is persist, persist, sneak them in and then persist some more. Other than that… I’ve got nothing.

Gluten Free Lemon Crumble Bars

Summer is technically winding down, but here in Texas the heat is still on. These great lemon bars seem to work well as a summer treat, and yet the oat topping adds a little more heartiness to this cookie bar. The best part is that we were able to experiment and successfully make these gluten free! They were fantastic, or so my family tells me since I am not a big sweet person.

51Z83dLKJPLIt’s always a good idea to eliminate gluten from your diet whenever possible, even if you’re still not sold on the idea yet that we should stay away from it, you can certainly at least try to reduce the amount of gluten in your diet. To learn more about why, I highly suggest reading the book Wheat Belly by William Davis, MD.

Chorizo and Shrimp Chilaquiles

Does anyone else enjoy cooking and experimenting with new recipes? I love when I have a new recipe to try, and I enjoy it even more when it turns out great! This recipe for Chorizo and Shrimp Chilaquiles is a guaranteed crowd pleaser. Once again, Southern Living inspired me to take one of their recipes and give it a Texas twist.   It is easy to throw together, and taking the time to fry the corn tortillas is definitely worth the extra effort.

Amazing Muffin Cups

I feel like brunch and breakfast recipes are hard to come by, so when I find a great one I love to share it. Although, I can’t take the credit for this delicious and very easy recipe, I originally found it at Johnsonville.com. It is an easy recipe to make, and it can even be made ahead of time and quickly reheated to eat on the go.

Donna’s Summer Salad

Is it just me, or has this year flown by? I cannot believe it is May already! With summer just around the corner,  I crave foods that are light and refreshing when the temperature starts to rise. This salad hits the spot. Not only is it a fresh, delicious salad, but it is healthy as well.

Gluten Free Chicken Stroganoff

I don’t know about you, but as much as I love cooking, sometimes after a long day the last thing I want to do is spend hours in the kitchen making dinner. I love this recipe from lil’ luna, and think it is such a creative twist to make the traditional Beef Stroganoff with chicken instead. Not to mention, besides cooking the pasta, you can definitely make this meal in just one pot… have I mentioned that I love one pot meals?

As promised in the original recipe, this dish is easy and will definitely be a go to meal to make for my family. The little changes I made to this recipe was substituting gluten free flour where is calls for regular flour and gluten free egg noodles.  I hope you get a chance to try this delicious and filling meal for yourself.
